In an industry where celebrity chefs are known as much for their salty talk and quick tempers as their food, Eric Ripert stands out. The winner of four James Beard Awards, co-owner and chef of a world-renowned restaurant, and recipient of countless Michelin stars, Ripert embodies elegance and culinary perfection. But before the accolades, before he even knew how to make a proper hollandaise sauce, Eric Ripert was a lonely young boy in the south of France whose life was falling apart.

From the chef behind Momofuku and star of Netflix’s Ugly Delicious—an intimate account of the making of a chef, the story of the modern restaurant world that he helped shape, and how he discovered that success can be much harder to understand than failure. Full of grace, candor, grit, and humor, Eat a Peach chronicles David Chang’s switchback path. Along the way, Chang gives us a penetrating look at restaurant life, in which he balances his deep love for the kitchen with unflinching honesty about the industry’s history of brutishness and its uncertain future.

In this captivating memoir, the man whom Julia Child has called "the best chef in America" tells the story of his rise from a frightened apprentice in an exacting Old World kitchen to an Emmy Award-winning superstar who taught millions of Americans how to cook and shaped the nation's tastes in the bargain. The Apprentice is the poignant and sometimes funny tale of a boy's coming of age. Beyond that, it is the story of America's culinary awakening and the transformation of food from an afterthought to a national preoccupation.

Before Gabrielle Hamilton opened her acclaimed New York restaurant Prune, she spent 20 fierce, hard-living years trying to find purpose and meaning in her life. Above all she sought family, particularly the thrill and the magnificence of the one from her childhood that, in her adult years, eluded her. Hamilton’s ease and comfort in a kitchen were instilled in her at an early age when her parents hosted grand parties, often for more than 100 friends and neighbors. The smells of spit-roasted lamb, apple wood smoke, and rosemary garlic marinade became necessary to her.

Histoire
From the reinvention of French food through the fine dining revolution in America, Daniel Boulud has been a witness to and a creator of today's food culture. A modern improviser with a classical foundation (a little rock 'n' roll and a lot of Mozart, he'd say), he speaks with the authority that comes from a lifetime of preparing, presenting, and thinking about food - an ancient calling with universal resonance. In Letters to a Young Chef, Boulud speaks not only of how to make a career as a chef in today's world, but also of why one should want to do so in the first place.

Ce que les critiques en disent
"Whatever Jen Agg says is worth listening to. As owner of Toronto's excellent The Black Hoof, she's one of the most vocal and interesting observers of the peculiar subculture of the restaurant business. I Hear She's a Real B*tch is the book a lot of us have been waiting for. A terrific, beautifully written, frank, and funny memoir, and a compelling argument for pulling down the long outdated system of 'bro' culture that has dominated the industry since what feels like the beginning of time." (Anthony Bourdain)
"Jen Agg's I Hear She's A Real B*tch could help change restaurant culture.... Call her a bitch? She'll take the word and redefine it for you as an empowering adjective. Don't think workplace sexism is a real thing in restaurants? She'll organize a whole conference around the issue, as she did in the fall of 2015 after a Toronto pastry chef launched a human rights complaint over sexual harassment allegations at a King Street restaurant, and call it Kitchen Bitches.... If a generation of cooks followed Kitchen Confidential into the industry on the promised glory of good times and hard living, for largely different reasons - because restaurant ownership is so desperately lacking in diversity and because kitchen culture could sure use a change - with hope, I Hear She's a Real B*tch will do the same." (The Globe and Mail)

Right up there with Hamilton’s Blood, Bones & Butter
Unfortunately, the crude sexual and drug use references seem forced and out of place, like some one told her to add them after the fact. Other wise it was a good listen.

Jen Agg is a Badass!
I loved listening to Jen tell her incredible life story! She was completely fearless in her endeavours and never took no for an answer.
This book is full of so much more than just how to open a restaurant, although I found these chapters captivating. She also shares some great ideas on workplace culture, (which I definitely could translate into my male-dominated workplace) feminism and white privilege, and self awareness. She doesn't shy away from anything and that's why this book is so much more than just a "Girl Boss" how to.
I love that she knows what she wants, and I truly think there are several take aways here (no pun intended!) that can be applied to many aspects of life.

A Must Read For Any Canadian
I absolutely loved this audio book, written and performed by Jen Agg. To me, Agg masterfully presents her life story to the reader, which is dotted with wonderful lessons, funny stories, and awesome references to places I know and love in Canada. Great to hear about an amazing Canadian rising above challenges and succeeding at the job she loves. Found I got a lot of personal introspection from listening to this book as well!

Good toronto come up story
If you’re going to work in the restaurant industry in toronto this is a must read. Really sober realistic stories from what it’s like to run high profile restaurants and also small startup places as well. Some pretty nasty anecdotes and wild stories from Jenn. I’ll be sure to eat at some of her spots now I’m curious about the food

first half is unnecessary
Like a long preamble preceding a recipe on a food blog, the first third of the book is spent on growing up in Toronto before biting into the mechanics, perils and trials of being a pioneer in the city's restaurant scene. That said, the rest of the book is insightful and good for anyone in the food industry or wondering what makes restauranteurs tick.
