In The Dorito Effect, Mark Schatzker shows us how our approach to the nation's number-one public health crisis has gotten it wrong. The epidemics of obesity, heart disease, and diabetes are not tied to the overabundance of fat or carbs. Instead we have been led astray by the growing divide between flavor - the tastes we crave - and the underlying nutrition.
Since the late 1940s, we have been slowly leeching flavor out of the food we grow. Simultaneously we have taken great leaps forward in technology, allowing us to produce in the lab the very flavors that are being lost on the farm. Thanks to this largely invisible epidemic, seemingly healthy food is becoming more like junk food: highly craveable but nutritionally empty. We have unknowingly interfered with an ancient chemical language - flavor - that evolved to guide our nutrition, not destroy it.

Excellent listen
I learned so much about why and how our food is bland and we don’t even know it. Sad state of affairs. Hopefully we can turn the food industry around by prioritizing flavour over cheap quantities. This book changed the way I grocery shop and cook.

Super interesting history of flavour
I love books that give insight on aspects of history and science that we don’t generally pay much attention to. The narration is engaging, the examples shared are interesting and compelling, and I will probably listen again to absorb more. Not a book I could listen to for more than an hour at a time because there’s a lot to take in, but I thoroughly enjoyed it!

makes ya think before you consume
I have had many opportunities to share bits and pieces of this book with many friends these past several weeks as I was so pleased with the informative sequence of stories to come to the conclusion of just how impure our food has become over the years.
It is my hope that one day someone sees the value of this book and makes it into a documentary if nothing else.
I highly recommend this book if one is curious about just how our food has declined in both value and quality for the almighty dollar.
The narrator was incredibly easy to listen to.

great info but full of unnessary fat shaming. i was really put off by all the negative depictions of fat people, especially since the thesis of this book is that the problem is flavour and individuals are set up to fail.
