This short audiobook is a combination of two chapters of the book Diet and Health. I have made podcasts of the chapters of this book, but some of the subjects are difficult to visualize and need to be listened to. This is one of the subjects. We go over some of the biochemistry of gluten and the diseases associated with bread intake. I have mentioned many diseases such as obesity, diabetes, immune disease, and cancer. The incidence of these have increased over the last few hundred years. I doubt if many of these diseases existed a couple thousand years ago.
There is confusion about what gluten is, what various gluten diseases are, and what is wheat sensitivity. I hope to straighten these out for you. To make it fun, I've thrown in a little biochemistry.
