Matty “Buffaloaf” Matheson
You need to get into the mind of Matheson to understand where he is coming from. He admits in his second blood that the recipes are somewhat unrealistic due to the multi day prep time. There are some great nuggets in here and worth reading and using. It gives good insight to his methods and his roots. Great for those who are one of his followers of which I am a part… although I am not entirely why.

Narration fail!
This was a struggle to listen to! Matty was yelling and trying to hard. I started my foray into cook books with Rick Bragg and that set my standards too high I suspect. I wouldn't recommend listening to, likely fine to read.
