From the reinvention of French food through the fine dining revolution in America, Daniel Boulud has been a witness to and a creator of today's food culture. A modern improviser with a classical foundation (a little rock 'n' roll and a lot of Mozart, he'd say), he speaks with the authority that comes from a lifetime of preparing, presenting, and thinking about food - an ancient calling with universal resonance. In Letters to a Young Chef, Boulud speaks not only of how to make a career as a chef in today's world, but also of why one should want to do so in the first place.

Publisher's Summary
In this landmark book, Danny shares the lessons he learned while developing the winning recipe for his way of doing business what he calls "Enlightened Hospitality". This innovative business philosophy emphasizes putting the power of hospitality to work in a new and counterintuitive way: the first and most important recipients of hospitality are the people who work for you. In descending order of priority, the next most important receivers of hospitality are guests, the community, suppliers, and investors. This way of setting priorities stands more traditional business models on their heads, but Danny considers it the foundation of every success he and his restaurants have had.
Full of behind-the-scenes history on the creation of Danny's most famous restaurants, and the anecdotes, advice, and lessons he has accumulated on his long and ecstatic journey to the top, Setting the Table is a treasure trove of innovative insights applicable to any business or organization.

A tasty book if one like appetizers.
The book spent time telling about Danny's travels and ignited his passion. For a foodie who knows different dishes there would be nodding heads. For me it was for business advice in being in the food business. There is a thin line
in education and self promotion. The book came close. Still there are bookmarks to be made here to share with those who have passion for food.
