Banana Bread 1/2 cup butter (1 stick) 2 cups sugar 2 eggs 1 teaspoon salt 1 teaspoon baking soda 4 cups all-purpose flour 6 very ripe bananas nuts or semi-sweet chocolate chips (optional) Cream the butter, sugar, and eggs. Sift together the salt, baking soda, and flour. In a separate bowl, mash the 6 ripe bananas. If bananas aren't ripe enough, the bread will be very dry. Add bananas to the creamed mixture and stir thoroughly. Mix in the flour and any chopped nuts or chocolate chips. Pour the mixture into 2 well-greased bread pans and bake in a 350° oven for 1 hour.
